Varan Phal/ Chakolya

Ingredients:-

*(For dough)
  • Whole wheat flour- 1 cup
  • Water- to knead the dough
  • Turmeric powder, red chili powder, roasted carom seed and salt- as per your taste
  • Oil- 1 tsp

*(For making dal)
  • Soaked Tur dal (for about 2hrs at least)- 1 ½ cup.
  • Water- (to pressure cook dal) and for runny consistency.
  • Oil- 1 tbsp.
  • Ghee- 1 tsp.
  • Mustard seeds, cumin seeds, turmeric powder, hing, methi seeds, curry leaves powder, red chili powder- (for tadka).
  • Kokam- 1-2.(if you don't have kokam you can take tamarind pulp/ amchur powder 1 tsp)
  • Garlic paste- 1 tsp (optional)
  • Jaggery, salt-as per taste
  • Chopped coriander, piece of lemon, & grated dry coconut- for garnishing.
Method : -
  1. First pressure cook the dal by adding enough water, turmeric powder and hing for about 4-5 whistle.
  2. On the other in a mixing bowl add whole wheat flour, turmeric powder, red chili powder, roasted carom seed, salt, oil and  knead the dough by adding water (just like our regular roti atta). Keep a side for 15-20 mines.
  3. Now heat a sauce pan with oil, when oil become hot add mustard and cumin seeds, add hing, turmeric powder, red chili powder, methi seeds, curry leaves powder, kokam, garlic paste, saute 2 min.
  4. Add cooked dal, mix it well in tadka. add water as per your desire consistency, bring to boil, now add jaggery and salt.
  5. When it boils, allow to simmer it on low flame.
  6. Meanwhile take a dough divide it n to two, roll a big roti out of it.
  7. With a sharp knife cut parallel and then across lines to create square or diamond shape.
  8. Now drop this prepared diamonds in the bubbling dal.
  9. Stir, cover and allow to cook should take 4-5 mines.
  10. Add little more water if required, but make sure when done the consistency should be saucy and runny.
  11. When done switch off the flame, sprinkle chopped coriander and grated dry coconut on top, serve hot immediately with dollops of ghee on top and squeeze little piece of lemon.

Pesarattu Dosa



Ingredients:-
  • Overnight soaked spilt green gram dal- 1 kt
  • Rice flour- 1 tbsp
  • Ginger-garlic- green chili paste
  • Salt- as per your tast
  • Finely chopped onion- 1 medium
  • Chopped coriander- as per you wants
  • Oil- for frying dosa


Method:-
1.      First drain water from dal, make smooth paste out of it with some water in a mixer grinder.
2.      Remove this batter into a bowl, add rice flour, ginger-garlic-chili paste, salt in it mix it very well add water if necessary (make like our regular dosa batter).
3.      Heat a flat pan, smear a little oil.
4.      With a big spoon pour the moong dal dosa batter into a round shape.
5.      Pour some oil on the sides and in the center of the dosa.
6.      Now sprinkle the finely chopped onion, and coriander leaves.
7.      Press these with plat spoon/ spatula so that they get stuck to the batter.
8.      Flip and cook both sides till crisp and browned.

9.      Serve this with any chutney or sauce.

Tomato Omlette

Ingredients:-
·        Tomato- 1 med, 1 finely chopped
·        Onion- 1 small
·        Green chili- 1
·        Ginger- garlic paste- 1 tsp
·        Coriander- 1 tsp
·        Plain oats- 1 tbsp
·        Gram flour 1tbsp
·        Rice flour- 1tbsp (optional)
·        Wheat flour- 1tbsp
·        Rawa- 1 tbsp
·        Salt- as per your taste
·        Cumin seed powder- 1 tsp
·        Oil- for roasting
·        Water- adjust consistency accordingly.

Method:-
1.      Make a pure out of 1 med tomato, 1 small onion, green chili
2.      Mix all the flours, oats and rawa together.
3.      Now add tomato pure, finely chopped tomato, and coriander to the flour mixture, add salt, cumin seed powder and mix it well by adding water, make a medium consistency (pancake) batter.
4.      Heat a pan, smear oil, with the large spoon pour the batter on a pan
5.      Spread it lightly with backside of the spoon.
6.      Sprinkle some oil drops on the edges & top of the omelette
7.      Flip and cook the other side.
8.      Cook the tomato omelette till both sides are cooked.
9.      Serve tomato omelette with bred, roti or have it as it with green chutney or tomato sauce.

Pudina/ Mint Rice

      


Ingredients:-
  •   Brown rice- ½ kt
  •  White rice- ½ kt
  •  Sliced Onion- 1 med
  •  Chopped vegetables of your choice- 1 bowl (I take Green peas, Carrots, Cauliflower, Potato)
  •  Mint paste-  2 tbsp (Mint leave, Onion, Ginger, Green chili)
  •  Ghee- 1 tbsp
  •   Indian spices – (Cumin seed-  1tsp, Tej patta/ bay leaf- 1-2, Black pepper- 2-3, Clove- 1-2, Cinnamon- one small piece)
  • Biryani/ Pulav Masala- 1 tsp (optional)
  •  Salt- as per taste
Method:-
  1. Combine two rice, and pressure cook them
  2. Heat a pan with Ghee/ Fat add all Indian spices, and onion fry them for a min.
  3. Now add chopped vegetables, cook them for 5 mines with lid.
  4. After tendering all the vegetables, add Mint paste fry for 2-3 mines on a low flame
  5. Now add pressure cooked rice, salt and masala mix well all together
  6. Steam rice for about 10 mines on low flame with lid then switched off the gas. 
  7. Your Mint rice is ready to serve.
  8. You can serve this rice with Raita or you can have as it is…

Pinwheeel Sandwich


  




Ingredients:-

·        Bread slice- 3
·        Tomato sauce- 1 tbsp
·        Pudina/mint Chutney- 1 tbsp
·        Homemade butter/ Loni- 1 tbsp
·        Cheese slice- 1 
·        Shredded carrot and cabbage- 1 tbsp
·        Chat masala-as per your taste. 
   
    Method :-

1.   Take 3 bread slices and cut the edges from all 4 sides. (Do not waste the sides, I made bread crumbs out of it )
2.   Roll them flat using chapati roller.
3.   Now apply butter, green chutney and sauce to each bread slices.
4.   Then place butter slice over green chutney slice.
5.   Also place a cheese slice over butter slice.
6.   Then place the sauce bread slice.
7.   Top up sauce slice with little grated carrot and cabbage.
8.   Sprinkle some Chat masala.
9.   Now slowly roll the sandwich tightly holding all three bread slices.
10. Cut the rolls into 1 inch pieces or as desired.
11.  Serve to your family as breakfast or it can be their lunch

Whole wheat flour and dry fruit slice cake


Ingredients:- 
* Whole wheat flour- 1.5 cup.
* Baking powder- 1 tsp.
* Baking Soda- 1 tsp.
* Pinch of salt
* Sugar- 1/cup
*Water- to dissolve sugar
* Milk (room temperature) - 1/ 2 cup
* Vanilla extract- 1 tsp
* Oil- 1 tbsp
* lemon juice- 1 tsp
* Chopped dry fruits- 1 small bowl
* Tutti-frutti- 1 tbsp

Method:-
1.      Preheat your oven at 180 degree Celsius.
2.      Mix water and sugar together, stir till the sugar is dissolved completely.
3.      Other hand sieve whole wheat flour, baking powder, baking soda and salt together.(this is your dry ingredients)
4.      Mix the tutti fruitti to your chopped dry fruit mixture.
5.      Now add vanilla extract, oil, milk and lemon juice to sugar water. Mix well (this is your wet ingredients) .
6.      Now mix Dry ingredients in to wet ingredients very well.
7.      Add dry fruits and tutti frutti mix well.
8.      Pour the batter in greased loaf pan.
9.      Gently tap and shake the pan, place the pan in the center.
10.   Bake in the preheated oven at 180 degree C for 40 mines or till tooth pick inserted in the cake comes out clean.

11.   When done, remove it on rack cool it down and then slice it and serve soft slice cake
